

The Wine Bin’s Cellar is a properly maintained, temperature-controlled wine cellar. It’s built to store the low production, highly prized wines that typically will increase in value and quality over time. Okay, the very expensive wines.
One of my biggest pet peeves with the typical package goods store is temperature and storage. It is fine to have wines sit at moderate room temperature if they do not need to be aged and will be consumed within six months. However, it is a bad idea to purchase premium wines that need to age for a few years or decades from a store that has them at room temperature.
How many times have you gone into a store to see that lovely bottle of Dom Perignon sitting behind the counter eight feet from the floor (heat rises, remember!)? Tell me in the middle of summer when the store closes that the a/c doesn’t get turned to 80 degrees. So for about $150, you can buy a wonderful bottle of vinegar.
